Week 7: Question of the Week

What have you made for dinner this week?
 
 
At the Eberhardt House, we've had
 
Grilled Chicken with Rice & Veggies
and Butternut Squash Soup
 
As you can see, I'm a big soup fan, especially during the winter months.  It's an easy way to pack in extra veggies and makes for a great lunch the next day.  Add a good side salad and maybe a slice of bread and I'm a happy girl. 
 
I have had this request from a few people and I think it's a great idea! 
Steve Avery set up an initial CFSV food blog.  I have the link to the right in the "Quick Links" section.  Many of you have great recipes that you make often or others want.  So please, send me some of your favorites or "go-tos" and I'll post them for us all to enjoy!

  1. One of our favorites this week has been grilled chicken fajitas. We use whole wheat tortillas and top the chicken with lots of grilled peppers and onions, cilantro and a little sour cream. We've also had Asian chicken stir fry with brown rice and lots of veggies as well as chicken tortilla soup. We love soups too :) One of our favorite breakfast recipes is whole wheat oatmeal pancakes with blueberries. http://www.melskitchencafe.com/2009/09/oatmeal-pancake-mix.html It's really quick b/c you make the mix ahead of time. They are really yummy and filling.

  2. This has been so much fun, great challenge Miki! We have had Chicken Enchiladas (thanks Dangerfields!), Pork Loin with broccoli, Tilapia with butternut squash, and tonight is Spinach and Parmesan stuffed Chicken with asparagus. We also made a spinach, red pepper and mushroom frittata that we have had all week for breakfast, it's awesome with cottage cheese (sorry Steve Avery).

    1. Turkey dinner with tons of leftovers to alternate daily, Tuna Casserole with veggies with leftovers to alternate on other days, daily Green Smoothies, planning on BBQing some marinaded flank with a side of veggies or a salad and brown rice, Hawaiian haystacks.

  4. We've had:
    Roasted Chicken (Thanks Costco) w/ Grilled Romaine with Garlic Bread for the kids.
    Breakfast for dinner (eggs, turkey sausage & Smoothies).
    Pork Roast, grilled asparagus and quinoa.
    Turkey Basil Parm burgers (w/ Pasta and marinara for the kids) grilled Romaine for me.
    Tonight....leftovers.
    Friday...Lauras for Wings I'm hoping.

  5. Green smoothies every day for lunch, of course. With 3 slices of turkey rolled up sitting fancy on toothpicks, side of guacamole and salsa for dipping.
    For dinners, we have had Flank Steak Fajitas, Cauliflower soup with salad and breadsticks, Thai Peanut Chicken and Pasta chocked full of veggies (this is the BOMB!!) Honey Lime Shrimp over rice with carrot fries and tomorrow we will be having loaded baked sweet potatoes!!

  6. My wife has made homemade chili. It is the best... The good thing is that she made enough to eat all week. So really nothing else to report on... Tonight is a different food, I'm excited,,,,,More left overs

  7. I've made this week:
    --Chicken and Brown Rice dish in the crockpot
    --Steak fajitas
    --Chicken Soup in the crockpot (forgot to add the noodles at the end)
    --Browned chicken over a great salad with veggies
    --A Bitchin' Chili (simmering right now!)
    Crockpot cooking is awesome, but I can't wait for it to warm up some so I can start grilling again!!! (no cottage cheese involved in any dish recipe, Laura. lol)

    1. Oh, I have a really good smoothie recipe (nothing special, but good!) that I drink in the morning. Could also be a good Recovery drink! Good amount of whey protein for quick absorption into the muscles.

  8. Well...thanks to my awesome husband and son, we have had what they've cooked. Traveling makes this challenge pretty tough...but I bet they are cooking up some more great dishes! So far we have had cedar plank salmon [no regards to CF Planks :)], steak, marinated chicken, egg sandwiches, and leftovers. Good stuff!

  9. Great "challenge" for us this week as we plan out meals every Saturday anyway. This week we enjoyed chicken enchiladas with the Mathews, 2 baked chickens and augrautin potatoes, chicken and bacon sandwiches (with the left over chicken), vegi stirfry (with the leftover chicken) and enjoyed a glass of wine with dinner. So glad last weeks challenge is over:) Wait til you hear what the kids have been doing for their lunches, they are rockin it!

  10. I liked this challenge too because I am the worst at planning out meals for the week. Breakfast was a no brainer because I literally eat exactly the same thing every morning. Berries and Kashi wheat biscuits and 1% milk. I am so boring but I love how healthy I feel after eating it. Lost 10 point because we are eating out saturday night for my dad's birthday. I do love Red Lobster so I guess it's worth taking the hit. Sorry team, but I love my dad more than you. ;}

  12. On Sundays I usually make a couple of meals for the whole week. This week I made a chicken stir-fry and homemade chili.

  13. Food was the easy part of the week for me... pull ups, push ups, plank, etc. not so much!!! Our menu for the week has been, chicken enchiladas, breakfast for dinner, hawaiian haystacks, spaghetti, grilled turkey sandwiches with tomato soup, & taco soup.

  14. Sourdough bread, Pub enchiladas, dill pesto penne with citrus salmon (baked), linguine and veggie red sauce, chicken & bacon sandwiches. The abundant leftovers packed by my smoke'n hot wife along with fruits n veggies makes lunchtime oh so fun. Ez peasy challenge.

  16. Favorite easy meal: Coconut milk, Thai Kitchen green curry paste, meat, stir fry veggies. YUM.

  17. I took Vacation so I could eat at home this week:
    Turkey Burger Patties, Salad
    Salmon, Green Beans, 1 Red potato
    Chicken Breast, strawberries
    Homemade Chicken Noodle Soup
    Turkey, Carrots, Peas
    Tonight Saturday Chichken Salad
    It was a good challenge but next week it should be to eat out every meal and lose weight.

    1. Hahaha Kuder, I agree! That would be a great challenge! Eating out and still being able to make good food choices. I think you, at least, deserve the award for being the most dedicated this week ;)

  18. What a great week! Thank you Miki, I needed this challenge!

    Spaghetti Squash with meat sauce,
    Taco Salad,
    Roast Chicken with veggies,
    Petite Pork Chops with apples and roasted asparagus,
    Sirloin Steak with roasted veggies.
    Tonight I put burgers on the menu, but we might just eat up the left overs instead.

    And I sent pictures of my dinner to my team almost every day. I'm pretty sure they're super happy 'bout that!

    1. I loved seeing your food! It helped keep me on track those nights when I was thinking, hmmm maybe the guys could eat out and I can just eat a smoothie real quick! We love to cook so it was actually great to have my boys helping me, and my one boy enjoyed your food pics as much as I did :)

  19. I ate dinner every night so it's hard to choose what one to choose from! My favorite meal so far has probably been egg sandwiches! Gotta love 'em!

  20. We enjoyed homemade spaghetti sauce with chicken meatballs, sweet potatoes and chicken in the crock pot, honey lime shrimp, and a new homemade sloppy joe recipe with ground turkey.

    Taco Salad
    Pasta with clam sauce and whole wheat rolls
    Tilapia and roasted brussel sprouts
    Quinoa and black bean burgers
    Roasted chicken and broiled red potatoes
    Salmon with whole wheat pasta salad
    and tonight will be left overs instead of dining out :(

This week at the Terrys house we have enjoyed green smoothies for breakfast, dinners we have had chicken enchiladas w/ green sauce, spaghetti and salad, asian pan pan noodles w/ veggies, chicken curry w/ veggies, bobbaly pizzas w/ good protein and veggies w/ salads and tonight is chili and potatoes. Lunches we did some leftovers and turkey sandwiches and chicken pitas w/ organes. Tons of food!

  23. Tilapia and salad. Beef roast and sweet potatoes. Ground turkey and black bean chili. Pita pizzas. Spaghetti with chicken sausage and tomatoes. Ground turkey tacos with corn tortillas and red bell peppers. Leftovers.

  24. This week we've had pan Pan noodles, fried up with chicken and veggies; spaghetti with ficken and salad; chicken coconut curry; and of course, a bunch of left overs. There's also endless green smoothies and fruit and homemade granola (thanks Charise) with soy milk. This is the best challenge, personally. I don't really like eating out, so this has been fantastic!

  25. I've enjoyed a variety of delicious homemade meals this week, my favorites being chicken enchiladas, chicken bacon sandwiches, pesto pasta with salmon, and stir fry! So good!

  26. This has been a good challenge for me. I have been lazy with my cooking lately. This week I have made Ranch Chicken Enchiladas, Sweet and Sour Meatballs and Manicotti just to name a few.

  27. I have had lots of chicken! It's easy and good in the crockpot. I also have had spaghetti with lean beef and chicken enchiladas. Tough but good week.

  28. We have had a sunday roast with sweet potatoes, coconut chicken with broccoli and mixed veggies ,cheese tortellini with spinach , pork barbacoa with brown rice and veggies and pecan crusted salmon with strawberry walnut salad and tonight we get orange-cumin chicken and vegetables :)
    Monday I am eating out :)

  29. We had nothing fancy this week, but my hubby said it was all good. We have had crock pot turkey breast with cheddar mashed potatoes and asparagus, chicken tortilla soup, turkey pot pie, meat loaf with baked potatoes and sauteed brussel sprouts, and cod with cole slaw.

  30. BBq chicken with potatoes, Then I made me a salad one night with it! Spaghetti, chicken enchiladas, broccoli and cheese soup!! My fam went to chick fil a Friday night I enjoyed a diet coke!!! UGH that is all I can think about!! Anyone want to go MOnday???

Chicken and wild rice soup, grilled chicken w/ lemon roasted broccoli and califlower, bow tie pasta w/ spinach and mushrooms, turkey burgers w/ fruit salad, garlic brauts w/ red potatoes and green beans. We are not used to eating in 7 nights a week so there are plenty of left overs for lunches.
