FINAL WEEK: Question of the Week

We are now going on two weeks of no starch after lunch.

What is your favorite starch-free snack?
How have you replaced starch with your dinners?

For some of you, you may be more sensitive to starch than others.  This may be exactly what your body needs to continue to change.  For others, starch isn't as big of an issue.  So just a little reminder that when this challenge ends, don't let the pendulum swing the other way and go crazy with starch...keep your portions in check.  Continue to fill up on veggies and lean protein with a good, healthy starch "on the side."

  1. I'm so excited I decided to post first. We made a killer "pizza", but instead of crust, we put sliced zuchinni's in the pan then topped it with sauce, cheese and pepperoni. I loved it! The other thing I'm loving is carrots and hummus and peanut butter and bananas. Yumm!
Thanks Miki for making us expand our already expanded horizons!

My mom definitely took mine... Those zucchini pizzas were SO good! Other than that, we've done shrimp stir fry instead of shrimp tacos, omelettes with lunch meat instead of grilled sandwiches, etc. My favorite snack is banana and peanut butter (another one my mom stole from me...) Definitely a go to.

  3. I usually get my carbs from fruit/sweet potato/squash anyways so I haven't had to change much! Apple and nut butter and hard boiled eggs with little sweet peppers/ sandwich meat are a couple favorites. Dinners are usually meat and veggies, maybe lentils, and whatever spice concoction I come up with! Eggs, turkey bacon, mixed greens and salsa is another easy one.

  4. Lettuce wraps of any kind, almonds with raisins, hard boiled eggs, greek yogurt, green smoothies.
I started the no carbs at night thing a few weeks ago thanks to a team members suggestion. My body has responded really well to this and I think I am one of those people who is super sensistive to carbs. When I make my family fajitas, I enjoy the filling in the lettuce wrap or over a salad. I have learned I can modify everything that they eat for the most part.

  5. My favorite no starch snack would be apple slices and almond butter.
To replace my starch at night I have been wrapping everything in lettuce, and just eating practical meals...fish, veggies, fruit, veggies!

  6. My meals at night have pretty much been meat and veggies...too busy to get real tricky with this one :). My favorite snack any time is apple slices with lime juice and pepper...I'm addicted to this lately. I've been adding a handful of almonds for the protein part of the challenge.

    1. Apples and lime juice I get, but pepper too? I have been around food for a long time and have heard all sorts of interesting concoctions...but this is a first. I'll have to give it a try.

    2. I use to have it with salt and pepper but am cutting out most salt....seriously good! I will make one for Warner but won't share my own :)

  7. My favorite snack has been a small banana with roasted almonds. My favorite modified meal has been spaghetti. While my family eats pasta I eat spaghetti squash. ALTHOUGH... the teenage daughter actually prefers the squash so she's eating it with me.

  8. My favorite snack has been fresh berries and greek yogurt. I am surprised at how full I am by just doubling my serving of veggies with my protein instead of having protein, starch and veggies. I usually just have chicken/fish with veggies or if my family's meal is too difficult to modify, I make a protein shake.

  9. My favorite starch free snack is Celery, string cheese and turkey with jalepeno tabasco on top. If I'm feeling like a need a starch at dinner, I just punch myself in the gut and remind myself of why I don't want that starch. Thanks Miki.

  10. My favorite starch free snack is dried fruit and nuts or a V8 veggie juice and string cheese. Eliminating starch after lunch has been easier than I expected. I just make 2 veggies and add a small fruit if I feel like I need it.

  12. I was in Haiti during most of the starch challenge and they eat tons of rice and beans but I just ordered the meat and veggies and if it came with rice and beans I gave that to my hubby (we were stuck eating at the hotel all week and options were not many).
This week I have subbed some sweet potaoe for regular ones, and baked sweet potato fries for regular ones (hope those are legal).
We have had salad quite a bit.
I love nuts and apple or carrots for snack--with a little nut butter.

  13. Taco salad with turkey meat and veggies without the taco, shrimp stirfry with edamame, green smoothies, salmon with strawberries, flank and veggie blend, lots if water :0).

  15. I haven't gone too far out of my box. I like some of the ideas already posted. I've been having sweet potatoes and green beans just about every night instead of rolls or bread. My favorite snack continues to be string cheese and red bell peppers.

  16. I have been eating eggs and fruit for dinner a lot lately. It's been an easy go to for sure. Peanut butter and apples is a favorite snack of mine. I also love almonds and other nuts as snacks.

  17. Apples & peanut butter... celery, raisins & peanut butter. Peanut butter is awesome, my favorite snack! I "riced" some cauliflower, delish! Lots of protein, fruits and veggies. I must admit, I do really miss potatoes!

  18. My snacks are the same as alot of the above...but cottage cheese and tomatoes, or cottage cheese and pears with walnuts are really satisfying. As for replacing starch at dinner....just adding more veggies, and learning to like sweet potatoes.

  19. My favorite snack would be veggies! (broccoli)

  20. Favorite starch free snacks are veggies, pear with cottage cheese, apple slices with almonds or pecans, and greek yogurt. I've replaced starch in my dinners by simply having extra vegetables or salads. I've eaten a little more protein than normal sometimes if I'm extra hungry.

  21. banana and peanut butter is the best, I like Sauteed veggies with my fluffy omelet. It's been a long time since I've had an omelet for dinner.

  22. GREEN smoothies! I have them everyday. We also have been eating lots of bananas w/ almond butter. We replaced our starches with potatoes and corn. Kidding! We did more veggies and salads and added in sweet potatoes (sweet potato hash browns are the bomb!) and giving up my sweets for chocolate almond butter protein shakes. I don't feel hungry unless I am starving. =] I also carb loaded in the morning for the day. =]

Michael says his favorite snack was banana and almond butter. He doesn't usually eat raw bananas but seemed to love them this week.
